Crock Pot Vegetable Curry Over Rice

This is a simple recipe for a curry sauce that I adapted from a family member’s recipe, and it is my go-to recipe for a full hearty dinner. Whenever I serve this to guests, they are always coming back for seconds. The recipe is very versatile in that you can use whatever vegetables are in the fridge, or whatever vegetables you are craving! I usually serve this over rice. Why is this recipe so amazing? For one, it is easy to make in that you just put the ingredients in the crock pot and let it simmer. Second, it has the “secret ingredient” of Trader Joe’s Masala Simmer Sauce (sadly, this doesn’t exist anymore, but other simmer sauces might work). I don’t know what it is about this product, but the flavors go so well with the coconut milk, and I truly have never had a bad batch!

Ingredients:

  • 2 jars of Trader Joe’s Masala Simmer Sauce

  • 2 cans (14 ounces each) of full fat coconut milk

  • Any veggies of your choice, chopped

Instructions:

  • Add simmer sauce and coconut milk to crock pot and heat on high.

  • If you are adding onions or garlic, simmer on the stove in olive oil until translucent, then add to crock pot.

  • Chop any remaining veggies and add to sauce to your desired thickness (I usually fill it to the brim because the sauce thins as you cook it).

  • Cook on high until veggies are cooked to your desire.

  • Serve over rice, and enjoy!
