Green Bean Stir Fry over Soba Noodles

This noodle bowl combines green beans, bell peppers, scallions, and carrots and is flavored with my favorite miso soy sauce. Although this recipe uses soba noodles, you can use whatever noodle you’re in the mood for! Also feel free to add other vegetables to your liking to make it your own special dish.

Green Bean Stir Fry over Soba Noodles with a miso soy sauce

Ingredients:

Noodles

Vegetables

  • 1 pound green beans (about 3 cups chopped)

  • 1 bunch of scallions, thinly sliced

  • 3 bell peppers, chopped (I usually do red, yellow, and orange so I can “eat the rainbow”)

  • 2 carrots, shredded

  • 2 Tbsp. sesame oil

  • 2 Tbsp. sesame seeds

  • Cilantro (optional, for serving)

Sauce

  • 1/4 cup Bragg Liquid Aminos (or soy sauce)

  • 2 Tbsp. apple cider vinegar

  • 1 Tbsp. miso paste (I prefer Miso Master brand which I get refrigerated at our Natural Living Center)

  • 2 tsp. maple syrup (or sweetener of choice)

Instructions:

  1. Cook noodles according to package, set aside.

  2. Trim the ends from the green beans then slice into 1″ pieces (or keep whole like I did in the photo).

  3. Heat a large skillet over medium heat. Add 2 Tbsp. sesame oil to the pan and swirl around. Add the onions and saute for several minutes until translucent. Add green beans, bell peppers, and carrots. Continue to cook until the vegetables are tender, then stir in the sesame seeds.

  4. Whisk the ingredients for the sauce together and add to the cooked vegetable mixture.

  5. Add the noodles to the pan, stirring occasionally for 2 to 3 minutes.

  6. Transfer to a bowl and garnish with cilantro if desired.
