Mashed Butternut Squash
This is an easy recipe for mashed butternut squash that is lightly sweetened with maple syrup. It also has some cinnamon added for an extra burst of flavor! This was one of the first foods I ate after having bowel surgery since it was gentle on the gut but also full of nutrition.
Ingredients:
1 large butternut squash
1/2 teaspoon cinnamon
2 teaspoons maple syrup
1 teaspoon olive oil
Directions:
Preheat oven to 375 degrees.
Cut butternut squash in half lengthwise and scoop out the seeds.
Lightly brush the inside of squash with olive oil and place face down on a baking sheet.
Bake for 1 hour or until very tender.
Scoop out the flesh and place in a large bowl.
With a hand masher or an electric mixer on low, mix until smooth.
Add maple syrup and cinnamon and mix in.
