Peanut Sauce Noodle Bowl
This noodle bowl is a quick and delicious dinner that is loaded with veggies. Feel free to use whatever veggies you want! The peanut soy sauce gives this meal a wonderful flavor. This recipe was inspired by Naturally Ella.
Ingredients:
Sauce
2 tablespoons peanut butter
2 tablespoons Bragg Liquid Aminos (or soy sauce)
1 tablespoon lime juice
1 clove of garlic (minced)
1 teaspoon fresh minced ginger (or 1/4 tsp dried)
1 teaspoon maple syrup (or your favorite sweetener)
¼ to ½ cup water
Noodles
8 oz brown rice noodles (or noodle of choice)
1 teaspoon sesame oil
Vegetables
2 tablespoons olive oil
1 bunch of scallions (diced, save extra greens for topping)
4 cups assorted vegetables (cauliflower, carrots, broccoli, spinach, etc.)
Toppings
Extra scallion greens
Cilantro
Toasted sesame seeds or peanuts
Bean sprouts
Instructions:
Heat a wok or skillet over medium heat. Add the olive oil followed by the scallions. Cook for a couple minutes, just until they start to soften. Add the heartier vegetables, like cauliflower and broccoli, and cook until tender. If using greens, add towards the end of cooking.
Cook noodles according to package instructions. Drain, and set aside.
Combine all ingredients for the sauce, except the water. Stir until well combined and add just enough water to thin the sauce down so that it’s pourable. Set aside.
Add the sauce to the pan with the vegetables to heat the sauce, then mix in noodles. Alternatively, you can add the noodles to your individual bowl and top with the veggies/sauce. Top with cilantro, toasted sesame seeds, scallion greens, peanuts, and/or sprouts if desired.
