Vanilla Mint Macaroons (refined sugar free)

When I first switched to a diet that was free of refined sugars, I had several months where my sweet tooth needed some help. My chocolate coconut macaroons were my go-to dessert to satisfy this sweet tooth, and these vanilla mint macaroons are a similar style treat but with a different flavor. They are simple to make and require no baking. As with the chocolate macaroons, we often eat the batter before we get a chance to actually shape them into balls! The green color comes from spirulina, an algae that is considered a superfood with antioxidant and anti-inflammatory properties (don’t worry, you can’t even taste it!).

Vanilla mint macaroons sweetened with maple syrup.

Ingredients:

  • 1 heaping cup of shredded coconut

  • 1/4 cup coconut oil

  • 2 Tbsp maple syrup

  • ¼ tsp spirulina

  • 1/8 tsp peppermint extract

  • 1/2 tsp vanilla extract

Instructions:

  1. Combine all ingredients in a mixing bowl (you have to melt the coconut oil).

  2. Roll the batter into balls using your hands or a cookie dough scoop and place on a plate or tray.

  3. Stick the macaroon balls in the fridge to re-solidify the coconut oil. They are fine at room temperature once the coconut oil solidifies.
