Honey-Sweetened Corn Bread (Gluten Free)
This corn bread is so delicious, we eat it like it's dessert. It's simple, healthy, and easy to make. Most corn bread uses regular flour, but by using almond flour we have made it gluten free. You can sweeten it with honey or choose to leave it out.
Ingredients:
1 cup cornmeal
1 cup almond flour
1/2 teaspoon sea salt
1 tablespoon baking powder
1/4 cup coconut oil
1 egg
1 cup unsweetened almond milk (or other nut milk of choice)
1 tablespoon honey
Instructions:
Preheat oven to 425 degrees.
In medium bowl mix cornmeal, almond flour, salt, and baking powder.
Add coconut oil, egg, milk, and honey.
Stir until well mixed, but don't over mix.
Pour into 8x8 dish or similar size Pyrex dish and bake for 20 minutes.
