Maple-Sweetend Lemon Yogurt
I don’t eat dairy, but I LOVE yogurt (particularly thick Greek yogurts), so as an alternative I eat coconut milk yogurt. Coconut milk yogurt is a bit runny and doesn’t have the same creaminess that you get with a nice thick Greek yogurt, so I I like to spice mine up with some almond butter and lemon flavor. I use unsweetened coconut milk yogurt as a base since it doesn’t contain any refined sugar, and I add a bit of maple syrup to sweeten it up a bit. If you don’t want a creamy yogurt or want a simpler flavor, you can omit the almond butter and just stick with the lemon flavor and maple syrup. This pairs well with blueberries, strawberries, or raspberries for a nice quick snack. This recipe is easily adaptable and can me made with different flavors other than lemon.
Ingredients:
1/2 cup yogurt (I use So Delicious unsweetened vanilla coconut milk yogurt)
1 Tbsp maple syrup
1/2 - 1 tsp. lemon flavor (adjust depending on how subtle or strong of a flavor you’d like)
Optional: 1 Tbsp almond butter (for extra creaminess and flavor)
Optional: Fresh berries
Instructions:
Combine ingredients into a bowl and mix.
Add berries on top if desired, and enjoy!
